Banana Cake / Banana Muffins


6 Large Muffins / 12 Average Muffins or 1 Cake

125g Coconut Oil (or Butter)

3 Ripe Bananas Mashed

150g Desiccated Coconut

100g Ground Almonds

125g Buckwheat Flour (or Einkorn, Regular or GF Flour)

1 level tsp Bicarbonate of Soda

1tsp Vanilla Powder

A Grind of Salt

1 1/2 tsp psyllium Husk, mixed with 3/4 cup of water. (Or 3 eggs whisked)

2 tsp Cinnamon Powder

1 tsp Ginger Powder

10g Seaweed and 1 tbs Sea Moss


Preheat the oven to 180c

Mix Oil, Banana, Coconut, Ground Almonds, Bicarb, Flour, Vanilla, Salt, Psyllium (or eggs). If it's looking a little dry, that can be the psyllium, just add water or plant milk until you get a stiff but most cake mix.

Bake for:

35 - 40 mins for a Cake, try a knife test until it comes out dry if you are unsure.

27 mins for Muffins, expect them to be a bit springy when done, or bake a bit longer.

Allow to cool, especially if using psyllium husk.
